The Borderies, with only 4000 hectares, is without doubt the smallest of all the Cognac terroirs in terms of surface area. To the north-west of the town of Cognac, with a clay-limestone soil, decalcified on the surface, it produces bouquety, round eaux-de-vie with a bouquet characterised by a perfume of violet.
The Borderies brandies age faster than champagne.
The stock from which this barrel comes was acquired by the current owners and aged in the Grosperrin family cellar in Saintes. It has, however, been housed in a separate cellar in Burie in the heart of the Borderies region.
