Established in 1852, the origins of Boulestin seem to have been obscured with time. The brand was officially registered in 1879 under Emile Boulestin. Towards the end of the 19th century, it passed into the hands of Madame Vve Boulestin, and in 1905, Madame Jac. Emile Boulestin assumed control.

Their headquarters were situated in what is now recognized as Maison Boulestin at Place du Monnet. A monogram still adorns the portal, bearing the name of the Boulestin family. This chateau-like structure, erected in 1871, stands as a testament to their past triumphs.

The cellars were located at Rue Lohmeyer, constructed in 1870, where in 1904, Boulestin established a distillery. However, production at Rue Lohmeyer ceased in 1962 following Boulestin's acquisition by Otard.

Throughout its more than century-long existence, the company has introduced a diverse array of bottle offerings to the market.
